Every step down in quality throws away information permanently. At high settings the difference is invisible; pushed hard, you will see blocking in gradients and soft edges around text. Compare the previews and stop at the point where the image still does its job.
PNG output is lossless, which means it will not shrink a photograph anywhere near as much as JPG or WebP. For photographs choose JPG or WebP; keep PNG for screenshots, line art and images that need transparency.
